Recipe from Aaron Zimmerman’s grandmother, Rita Katchko
Preheat oven 350 degrees
One bowl; mixer is fine
- 1 cup oil
- ¾ cup sugar
- one can crushed pineapple with juice
- 2 eggs
- 2 cups flour
- 2 TB baking powder
- Sweetened coconut
Mix well- put in greased sheet pan or two loafs; sprinkle half a bag of sweetened coconut on top before baking.
Bake about 35-40 minutes or when toothpick comes out clean!
Enjoy- moist and dairy free!
